Dog Health Questions: Special dog training help information needed please?

I would like to train my dog to do everything from sit to being the ears for my deaf son.

I would love for some information on the best dvd or books or anything that would help me do this.

I live in Ireland and as I am aware of, there is no DEAF DOG training here.
