- What is a breed specialtie? It is a show where only 1 breed of dog is shown in conformation.
A group specialtie is a show where only dogs from that group are show. IE-a toy group specialtie would only have toy poodles,pekingese,affenpinschers,chihuah… and all the other breeds for the toy group.

Goldendoodles can only be shown in UKC obedience IF the are spayed/nutered - Really there are too many to list, and new ones are being added/invented all the time. I'll give it a go, but I'm sure I'll miss several that I am less familiar with.
Probably the most well known and most widely available sports include Obedience, Rally obedience, agility, flyball, herding, tracking, shutzhund, field trials (ie retrieving for retrievers, pointing for bird dogs, etc), earth dog, dock diving, and lure coursing.
Less well known but growing in popularity include French ring sport, carting, driving (similar to carting but the dog pulls a person instead of an inanimate load), sledding, weight pull, skijoring, bikejoring, cani-cross, canine freestyle (dancing with your dog), backpacking, and messenger dog trials (not very common here in the US but growing in popularity in many European countries). - there are so many to list here. But say if you go look under AKC, there are obedience, Agility, Field Trial, and so on. If you go out side of AKC, especially for working breed, there are Schutzhund, French Ring Sport, Street Ring, KNPV, ... tons more.
